Dafna Gabbay is Co-Founder and CEO of Finally Foods, an Israeli AI-driven molecular farming startup pioneering the production of animal-based proteins using genetically modified plants as bioreactors, with casein for the dairy industry as its first target.
A serial entrepreneur with over 20 years of business experience across global corporates and startups in both New York City and Israel, Dafna previously founded a startup in copper-based antimicrobials and built a career spanning advertising and business development.
Dafna advises founders to trust their instincts, be resilient, and embrace decisive leadership, noting that not making a decision is itself a decision and that stamina is essential for the entrepreneurial journey.
Finally Foods was established in collaboration with Evogene and The Kitchen FoodTech Hub by Strauss Group, securing pre-seed and seed funding from The Kitchen Hub, the Israeli Innovation Authority, and strategic investors including CBC Group, bringing total funding to approximately $2.6M.
Finally Foods has completed multiple field trials of casein-expressing potatoes in Israel, secured a commercial offtake agreement with CBC Group, and is targeting product launches with global dairy partners by 2027 to 2028, positioning itself at the forefront of the alternative protein revolution.
